Most of entertaining is about knowing your dominant/owner preferences for entertaining and your guests (dietary needs, religious issues, etc) and developing the entertaining around that.  But here are some links that deal with general etiquette, entertaining, and cultural differences in dining.

General Etiquette

Etiquette by Emily Post - always a book to have handy but in case of a pinch this is the online version of the book.

Etiquette at formal functions - a very detailed article on what to expect at a formal dinner including the varying servants that you would encounter, using a napkin, getting servants attention, and pictures of the various knives and forks you are likely to encounter.
